Preparation Method :

  • Trim excess fat from the chops and snip around the edges with kitchen scissors to prevent curling during cooking.
  • Sprinkle the chops with a little salt and pepper.
  • Mix all the remaining ingredients together to make a stuffing and add salt and pepper to taste.
  • Place the stuffing on one of the chops, and then put the other chop on top to make a "sandwich". Place the stuffed chops in a grill (broiler) pan and add 250ml water.
  • Cook under a preheated moderate grill (broiler) for 15 minutes each side. Cut "sandwich" in half.
  • Serve with grilled tomatoes and French fries.


  • 4 pork chops, cut fairly thin 
  • Salt and freshly ground pepper 
  • 2 small onion, finely chopped 
  • 2 stick celery, finely chopped 
  • 8 soft dessert prunes, stoned and chopped 
  • 30 grams butter, melted 
  • 2 tablespoon chopped mixed fresh herbs
  • 50 grams fresh white breadcrumbs 
  • 1 teaspoon sugar
