DRY PORK CURRY

Preparation Method :

  • Mix together the coriander seeds, paprika, pepper and salt, rub on both sides of the meat. Leave to stand for an hour.
  • Heat the oil in a pan, add the meat and fry quickly on both sides to seal.
  • Simmer to low flame and saute for about 5-7 minutes or until cooked through, stirring continuously.
  • Sprinkle with the fresh coriander and serve with salad.

INGREDIENTS

  • 750 grams pork fillets, cut into quarters and pricked
  • 50 ml IDHAYAM Sesame oil
  • 2 tablespoons coriander seeds, roughly pounded with a pestle and mortar
  • 3 teaspoon paprika
  • Pepper and salt, to taste
  • 2 tablespoons finely chopped fresh coriander, to garnish
