Preparation Method :

  • Mix the spices and seasonings to a thick paste with a little of the vinegar, then rub into the pork.
  • Heat oil in a heavy frying pan, add the garlic and saute for 1 to 2 minutes, stirring frequently.
  • Add the pork to the pan and cover with the remaining vinegar.
  • Bring to the boil, and then lower the heat, cover and simmer for about 1 hour or until the meat are tender.
  • Serve hot. 


  • 1 teaspoon cardamom seeds
  • 1 teaspoon ground cloves
  • 1 teaspoon ground ginger
  • 2 tablespoon ground coriander
  • 4 teaspoons ground turmeric
  • 8 teaspoons ground chili
  • 2 teaspoon ground cumin
  • 2 teaspoon salt
  • 1 teaspoon freshly ground black pepper
  • 300 ml vinegar
  • 750 grams boned pork, cut into 1 inch cubes
  • 100 ml IDHAYAM sesame oil
  • 10 cloves garlic, peeled and sliced
