Preparation Method :

  • Heat the oil in a wok. Add the garlic and chillies and stir-fry until the garlic is just golden. Add the pork, pepper, fish sauce and sugar, stirring constantly.
  • Stir in the bamboo shoots with the onion, red pepper and stock. Cook for about 3-5 minutes.
  • Stir in the basil leaves and cook for 1 more minute. Garnish with basil leaves and large slices of red chilli. Serve with boiled rice.


  • 150 grams pork fillet, thinly sliced
  • 50 grams canned bamboo shoots, very finely sliced
  • 2 tablespoons Sesame oil
  • 2 tablespoon Thai fish sauce
  • 1 garlic clove, crushed
  • Chillies, finely chopped, to taste
  • 50 grams finely chopped onion
  • 50 ml chicken or vegetable stock
  • ½ teaspoon pepper
  • ¼ teaspoon sugar
  • 50 grams thinly sliced red pepper
  • 2 handfuls of basil
  • 4 large red chillies, sliced, to garnish
  • 1 tablespoon basil to garnish
  • Boiled rice, to serve
