BACON STEAKS WITH REDCURRANT SAUCE

Preparation Method :

  • Snip the fat edges of the steaks to prevent curling. Brush with the butter and place under a preheated moderate grill (broiler) for 5 minutes.
  • Slice the black pudding (blood sausage) into 4 pieces. Core the apple and cut into 4 rings. Turn the bacon steaks over and place the apple rings and black pudding (blood sausage) on top.
  • Brush with butter. Continue to grill (broil) for a further 5 minutes, turning the topping once.
  • Transfer to a warmed serving dish and keep hot.
  • Drain the liquid from the grill (broiler) pan into a pan. Add the redcurrant jelly, wine vinegar and brown sugar.
  • Boil until the mixture is well blended and slightly syrupy. Spoon the sauce over each bacon steak and garnish with a parsley sprig.
  • Serve with mashed potatoes and minted peas.

  • 50 grams butter, melted 
  • 100 grams black pudding 
  • 2 dessert apple 
  • 4 tablespoons redcurrant jelly 
  • 2 teaspoon wine vinegar 
  • 2 teaspoon brown sugar 
  • Parsley sprigs to garnish parsley sprigs for garnish
