Preparation Method :

  • Cut pork crossways into strips 5 cm (2 inches) long and 12 mm ( ½ inch) wide. Combine coconut milk, shallots, coriander, cumin, turmeric, fish sauce, soy sauce, and sugar in a liquidiser and puree to make a marinade.
  • Put meat in a shallow baking dish and pour marinade over it. Stir to coat meat well. Let stand at room temperature for up to 1 hour, or cover and refrigerate up to overnight.
  • If refrigerated, remove meat from refrigerator 30 minutes before cooking. Soak 12-14 long wooden skewers in water for 30 minutes.
  • Build a hot wood or charcoal fire in a barbecue, or preheat a gas barbecue to 200°C (400°F). Thread 3 pieces of meat on each skewer. Grill until browned, 1-2 minutes per side. Serve hot, accompanied with peanut sauce.


  • 750 grams boneless pork loin
  • 150 ml coconut milk
  • 5 Tablespoon finely chopped shallots
  • 2 teaspoon ground coriander

  • 2 teaspoon ground turmeric
  • 4 Tablespoon Thai fish sauce or anchovy sauce
  • 2 teaspoon light soy sauce
  • 4 Tablespoon firmly packed golden brown sugar

Asian Peanut Sauce

  • 200 grams creamy peanut butter
  • 100 ml chicken stock
  • 4 Tablespoon orange juice
  • 2 Tablespoon soy sauce
  • 1 Tablespoon lemon juice
  • 1 teaspoon sesame oil
  • 4 cloves garlic, chopped
  • 1 Tablespoon finely chopped fresh ginger
  • 1 small green chilli pepper, seeded and chopped
  • 3 tablespoon chopped fresh mint
