PORK WITH GREEN PEPPERCORNS

Preparation Time :

Cooking Time :
20 minutes

Preparation Method :

  • Season the pork with salt and pepper, and fry in the oil for 6 to 8 minutes on each side. Remove and keep warm.
  • Pour off excess fat from the pan, add the peppercorns and stir for 1 minute, then add the mustard and cream.
  • Stir well to pick up the brown bits from the bottom and continue cooking without boiling until the sauce thickens.
  • Spoon the sauce over the pork and garnish with watercress or parsley.

INGREDIENTS

  • 4 pork steaks or chops
  • Salt and freshly ground pepper
  • 2 tablespoon oil
  • Watercress or parsley to garnish

Sauce

  • 2 teaspoon canned green peppercorns
  • 2 tablespoon French mustard
  • 12 tablespoons single cream
