PORK WITH ORANGE

Preparation Method :
- Place the fillets in a dish and pour the orange juice over. Crush the juniper berries with the back of a spoon and add to the orange juice with the salt and pepper.
- Cover and leave to marinate for 5 hours.
- Remove the fillets and place under a preheated hot grill.
- Cook for 10 to 15 minutes, turning frequently and spooning over some of the orange marinade to prevent burning.
- Strain the remaining orange marinade and pour into a saucepan.
- Bring to the boil and boil briskly to reduce slightly.
- Arrange the pork on a heated serving dish and pour the orange sauce over.

- 200 grams pork fillets, trimmed of fat
- 500 ml unsweetened orange juice
- 25 juniper berries
- Salt
- Freshly ground black pepper
