Preparation Method :

  • Place the fillets in a dish and pour the orange juice over. Crush the juniper berries with the back of a spoon and add to the orange juice with the salt and pepper.
  • Cover and leave to marinate for 5 hours.
  • Remove the fillets and place under a preheated hot grill.
  • Cook for 10 to 15 minutes, turning frequently and spooning over some of the orange marinade to prevent burning.
  • Strain the remaining orange marinade and pour into a saucepan.
  • Bring to the boil and boil briskly to reduce slightly.
  • Arrange the pork on a heated serving dish and pour the orange sauce over.


  • 200 grams pork fillets, trimmed of fat
  • 500 ml unsweetened orange juice
  • 25 juniper berries
  • Salt
  • Freshly ground black pepper
