ROAST PORK WITH WALNUT SAUCE

Preparation Method :

  • Preheat the oven to 400°F (200°C/gas 6). Season the pork with salt, pepper, and nutmeg, and rub with butter. Season with nutmeg.
  • Heat a large frying pan over high heat. Brown the pork on all sides. Add the brandy, tilting the pan to ignite it. Let it burn out.
  • Transfer the pork to a small, deep baking dish. Cover with milk and bake until tender, about 2 hours. After 1 hour, add the walnuts. Season with salt and pepper.
  • Add more milk to keep the meat moist. Serve hot with the potatoes and apples and drizzled with the sauce.

INGREDIENTS

  • 2 kg pork tenderloin
  • Salt and freshly ground black pepper
  • 2 tablespoon butter
  • Freshly grated nutmeg
  • 2 tablespoon brandy
  • 1 liter milk
  • 200 grams walnuts
  • Mashed potatoes, to serve
  • Baked apples, to serve
