Preparation Method :

  • Make cuts in the rind or fat around the steak at half inch intervals to stop it curling up in the heat.
  • Preheat the grill (broiler) and oil the rack. Brush one side of the steaks with butter and grill (broil) on this side for 4 minutes.
  • Mix the remaining ingredients together. Turn the steaks, spread with the mixture and cook for a further 5 minutes, or until the glaze is lightly browned.
  • Serve with sauté potatoes and Peas in Mint Sauce. 


  • 4 gammon steaks
  • 30 grams butter, melted
  • 8 tablespoons apricot jam, sieved 
  • 2 teaspoon dry mustard 
  • 1 teaspoon ground ginger pinch of salt 
  • 2 tablespoon water
