OMELETS WITH POTATO STUFFING

Preparation Method :

  • Preheat oil in a small frying pan over high heat. Add onion and green chilies and sauté for 3 minutes.
  • Add capsicum and sauté for another 3 minutes.
  • Peel and mash potato. Add along with salt and pepper. Fry till potatoes turn light brown. Remove from fire.
  • Whip the eggs. Add salt and make 2 omelets using the remaining oil.
  • Spread the potatoes over one of the omelets. Sprinkle sauce over the potatoes and cover with the other omelet.

INGREDIENTS

  • 5 tablespoons peanut oil
  • 200 grams finely chopped onion 
  • 2 chopped green chili 
  • 2 chopped capsicum
  • 2 medium sized boiled potato 
  • Salt to taste
  • 1 teaspoon pepper
  • 4 eggs 
  • 2 tablespoon tomato sauce
