Preparation Method :

  • Whisk together the eggs, chives and 1 tablespoon of water. Season well.
  • Melt the low-fat spread in a small non-stick pan. Pour the egg mixture into the pan.
  • Gently draw the mixture into the middle of the pan. When the omelette is nearly set, spoon the vegetables, cheese with salt and pepper. Continue to cook for 20-30 seconds.
  • Fold the omelette in half, remove from the heat and serve.


  • 50 grams potato, peeled, cooked and grated
  • 1 tablespoon chopped fresh chives
  • 1 teaspoon low-fat spread
  • 50 grams onion, chopped finely
  • 2 eggs
  • 25 grams mature Cheddar, grated
  • Salt and freshly ground black pepper, to taste
