Preparation Method :

  • Heat oil in pan, add potatoes, cook, covered, about 15 minutes, turning occasionally, until tender, but not browned.
  • Add onion, cook, covered, until soft. Strain mixture through coarse sieve; reserve 1 tablespoon oil, cool.
  • Combine potato mixture and eggs in a bowl. Heat reserved oil in pan, add potato mixture, cook 2 minutes or until omelette is partly set and lightly browned.
  • Carefully slide omelette onto large plate, invert into same pan, cook other side about 2 minutes or until set and lightly browned.
  • Cool 20 minutes before serving.



  • 500 ml Peanut oil
  • 750 grams potatoes, peeled, thinly sliced
  • 250 grams onion, sliced
  • 6 eggs, lightly beaten
