GREEK POTATO SALAD

Preparation Time :
15 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Boil, steam or microwave potatoes until tender; cool.
  • Quarter peppers, remove skin and membranes.
  • Grill peppers, skin side up, until skin blisters and blackens.
  • Peel away skin, slice peppers. Cut each tomato into 8 wedges.
  • Combine all ingredients in bowl; mix gently. Pour over dressing; mix gently.

Dressing:

  • Combine all ingredients in jar; shake well.

 

INGREDIENTS

  • 1 kg new baby potatoes, halved
  • 200 grams red pepper
  • 200 grams yellow pepper
  • 250 grams tomatoes, peeled
  • 200 grams red Spanish onion, sliced
  • 100 grams kalamata olives
  • 200 grams feta cheese, cubed

Dressing

  • 100 ml sesame oil
  • 1 tablespoon lemon juice
  • 1 clove garlic, crushed
  • 1 tablespoon chopped fresh dill
  • 2 teaspoons chopped fresh thyme
