MARINATED BEEF AND POTATO SALAD

30 minutes

Preparation Method :

  • Cut beef into thin strips. Combine beef, walnut oil, honey, vinegar, fennel and pepper in bowl; cover, refrigerate overnight.
  • Heat olive oil in pan, cook beef in batches over high heat until browned and tender.
  • Boil, steam or microwave potatoes until tender; cool. Combine beef, potatoes, tomatoes and snow peas in bowl; mix well.
  • Place snow pea sprouts in serving dish, top with beef mixture, drizzle with dressing.

Dressing:

  • Combine all ingredients in jar; shake well.

 

INGREDIENTS

  • 500 grams beef eye-fillet
  • 1 tablespoon walnut oil
  • 1 tablespoon honey
  • 50 ml red wine vinegar
  • 1 teaspoon ground fennel pinch cayenne pepper
  • 1 tablespoon sesame oil
  • 750 grams new baby potatoes, halved
  • 250 grams cherry tomatoes
  • 100 grams snow peas, halved
  • 150 grams snow pea sprouts

Dressing

  • 100 ml extra sesame oil
  • 2 teaspoons red wine vinegar
  • 2 tablespoons seeded mustard
  • 1 teaspoon mild sweet chili sauce
  • 1 teaspoon honey
