PEPPER AND POTATO SALAD WITH TUNA DRESSING

Preparation Time :
15 minutes

Cooking Time :
30 minutes

Preparation Method :

  • Boil, steam or microwave unpeeled potatoes until tender; drain, cool, slice.
  • Cut salami slices into quarters.
  • Combine potatoes, salami and torn lettuce leaves with remaining ingredients in serving bowl; drizzle with dressing.

Tuna Dressing:

  • Blend or process all ingredients until smooth.

 

INGREDIENTS

  • 750 grams potatoes
  • 100 grams spicy salami
  • 1 large green oak leaf lettuce
  • 200 grams red pepper sliced
  • 50 grams seedless black olives

Tuna Dressing

  • 200 grams can tuna chunks in brine, drained
  • 1 tablespoons chopped, drained capers
  • 125ml mayonnaise
  • 2 tablespoons lemon juice
  • 1 tablespoon tomato paste
  • 2 tablespoons chopped fresh basil
  • 1 clove garlic, crushed
