POTATO AND PRAWN SALAD

1 hour 20 minutes

Cooking Time :
20 minutes

Preparation Method :

  • Put potatoes into a pot of boiling salted water.
  • Return to the boil, reduce heat and simmer for 15-20 minutes or until tender.
  • Drain, peel and chop potatoes roughly.
  • Mix with mayonnaise, tarragon, salt and pepper to taste. Leave to cool for about an hour.
  • When cool, mix the potatoes with chopped eggs and prawns.
  • Transfer the prawn mixture into a deep serving dish.
  • Serve with sliced cucumber and garnish with snipped chives.

INGREDIENTS

  • 550 grams potatoes
  • 100 grams prawns, cooked, peeled and chopped
  • 50 grams mayonnaise
  • 50 grams dried tarragon
  • Ground black pepper and salt to taste
  • 2 eggs, hard-boiled, shelled and chopped
  • 1 cucumber, sliced
  • 1 small bunch chives, snipped
