Preparation Method :

  • Boil, steam or microwave potatoes until tender; cool.
  • Combine potatoes, shallots, half the parsley and mayonnaise in bowl; mix well.
  • Sprinkle with remaining parsley.


  • Blend or process egg yolk, juice, garlic and mustard until smooth.
  • Add oils gradually in a thin stream while motor is operating, stir in milk.



  • 1 kg potatoes, peeled, chopped
  • 5 green shallots, chopped
  • 2 tablespoons chopped fresh parsley


  • 1 egg yolk
  • 3 teaspoons lemon juice
  • 1 clove garlic, crushed
  • ½ teaspoon French mustard
  • 50 ml Sesame oil
  • 1 tablespoon milk
