WARM ENDIVE AND POTATO SALAD

Preparation Method :

  • Cut potatoes into 5mm slices. Heat oil in pan, add garlic, cook potatoes in batches until brown and tender; drain on absorbent paper.
  • Add rocket and endive to same pan, cook, stirring, until rocket and endive are just wilted.
  • Add potatoes, vinegar and mustard, cook, stirring, until heated through.
  • Stir in radishes and chives until just combined, serve immediately.

 

INGREDIENTS

  • 1 kg new baby potatoes
  • 2 tablespoons peanut oil
  • 2 cloves garlic, crushed
  • 150 grams rocket
  • 300 grams curly endive
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon seeded mustard
  • 1 bunch radishes, sliced
  • 2 tablespoons chopped fresh chives
