Preparation Method :

  • Heat the oil in a pot. Stir-fry onion and garlic until softened.
  • Add potato cubes, curry powder, salt and stock.
  • Bring to the boil and simmer for 20-22 minutes or until potatoes are cooked.
  • Add milk with mint leaves and simmer for another 3-5 minutes, remove from the heat.
  • Cool slightly, then puree in a blender.
  • Reheat soup before serving. Sprinkle with fried grated potato and serve hot.


  • 500 grams potatoes, peeled and cut into small cubes
  • 750 ml vegetable stock
  • 200 ml milk
  • 2 tablespoon Cooking oil
  • 1 potato, washed, peeled, grated and deep-fried
  • 1 onion, peeled and finely chopped
  • 2-3 garlic cloves, peeled and finely chopped
  • 1½ teaspoon curry powder
  • 1 teaspoon dried mint leaves
  • Salt to taste
