BAKED POTATOES WITH ASPARAGUS TOPPING

Preparation Time :
20 minutes

Cooking Time :
1 hour

Preparation Method :

  • Scrub potatoes well.
  • Pierce skin in several places with fork or skewer.
  • Place potatoes onto oven shelves.
  • Bake in moderately hot oven about 1 hour or until tender.
  • Serve with Asparagus and Cheese Sauce topping.

Asparagus and Cheese Sauce

  • Cut asparagus into 4cm lengths; boil steam or microwave until tender.
  • Heat butter in pan add flour, stir over heat until mixture is bubbly.
  • Remove from heat, gradually stir in milk, stir over heat until mixture boils and thickens. Remove from heat, stir in cheese.
  • Divide asparagus between potatoes, top with cheese sauce and sprinkle with nuts.

 

INGREDIENTS

  • 1.5 kg Old Potatoes

Asparagus and Cheese Sauce

  • 1 bunch fresh asparagus
  • 50 grams butter
  • 2 tablespoons plain flour
  • 500 ml milk
  • 150 grams grated tasty Cheddar cheese
  • 20 grams flaked almonds, toasted
