GLASS NOODLES WITH POTATO CUBES AND MINCED BEEF

Preparation Method :

  • Drain the potatoes and pat dry on absorbent paper to remove excess moisture.
  • Heat the oil in a wok and fry potatoes until golden brown, remove and drain. Set aside.
  • Heat a spoonful of oil in wok and stir-fry onion until golden brown.
  • Add minced beef and stir-fry for 3-5 minutes.
  • Return fried potatoes to wok and add glass noodles in batches. Mix well.
  • Add dark soy sauce mixture and toss thoroughly.
  • Finally add in the beef stock with sugar, salt and pepper.
  • Mix well over medium heat until noodles are cooked. Serve hot.

INGREDIENTS

  • 250 grams potatoes, peeled, diced and soaked in water
  • 150 grams Tang Hoon (glass noodles), soaked in warm water to soften and drained
  • 150 grams minced beef
  • 50 ml cooking oil
  • 1 onion, peeled and diced
  • 1 tablespoon dark soy sauce
  • 50 ml water
  • 5 tablespoon beef stock
  • ½ teaspoon sugar
  • A pinch of salt
  • ½ teaspoon ground white pepper
