GRATIN OF FENNEL AND POTATO

Serves :

Preparation Time :
20 minutes

Cooking Time :
1 hour

Preparation Method :

  • Heat oil in pan, add leek, fennel and garlic, cook, stirring, until leek and fennel are soft.
  • Place potatoes over base of shallow ovenproof dish (1.5 litre/6 cup capacity), top with leek and fennel mixture, pour over cream.
  • Sprinkle topping over cream, bake, uncovered, in moderate oven about 1 hour or until topping is browned and potatoes are tender.

Topping:

  • Combine all ingredients in bowl; mix well.

 

INGREDIENTS

  • 2 tablespoons Peanut oil
  • 350 grams leek, sliced
  • 500 grams fennel bulb, thinly sliced
  • 2 cloves garlic, crushed
  • 500 grams old potatoes, peeled, thinly sliced
  • 250 ml cream

Topping:

  • 100 grams stale breadcrumbs
  • 50 grams grated parmesan cheese
  • 50 grams butter, melted
