MUSTARD POTATOES WITH SPINACH

Preparation Method :

  • Heat butter in large pan, add onion, cook, stirring, until onion is soft.
  • Add potatoes, garlic, stock and mustard, simmer, covered, about 20 minutes or until potatoes are tender.
  • Add cream and spinach, simmer, covered, until spinach is just wilted.

 

INGREDIENTS

  • 50 grams butter
  • 150 grams onion, finely chopped
  • 1 kg new baby potatoes, halved
  • 1 clove garlic, crushed
  • 250 ml chicken stock
  • 2 teaspoons seeded mustard
  • 1 tablespoon cream
  • 350 grams English spinach, roughly chopped
