Preparation Method :

  • Grease 4 shallow ovenproof dishes (1 1/3 cup/330 ml capacity).
  • Cut potatoes and Sweet potatoes into 5 mm slices.
  • Boil, steam or microwave potatoes and Sweet potatoes separately until just tender; drain, cool.
  • Heat butter in pan, add flour, stir over heat until bubbly.
  • Remove from heat, gradually stir in milk and stock, return to heat, stir until sauce boils and thickens.
  • Stir in cheese and mustard.
  • Layer half the potato and Sweet potatoes slices into prepared dishes.
  • Pour over half the sauce. Repeat with remaining potato, Sweet potatoes and sauce.
  • Top each dish with extra cheese, nuts and paprika.
  • Bake, uncovered, in moderate oven about 20 minutes or until heated through.



  • 750 grams potatoes, peeled
  • 500 grams Sweet potatoes, peeled
  • 100 grams butter
  • 50 grams plain flour
  • 350 ml milk
  • 150 ml chicken stock
  • 50 grams grated Swiss cheese
  • 2 teaspoons French mustard
  • 50 grams grated Swiss cheese, extra
  • 2 tablespoons almonds flakes
  • ΒΌ teaspoon paprika
