Preparation Method :

  • Boil, steam or microwave Sweet potatoes until just tender; drain, rinse under cold water, drain.
  • Heat butter in pan, add onion, rind and juice, cook, stirring, until onion is soft.
  • Add stock, berries, cinnamon, pear, currants and honey, cook, stirring, about 8 minutes or until pear is tender.
  • Gently stir Sweet potatoes into onion mixture, stir until heated through.
  • Serve sprinkled with parsley and nuts.



  • 1.5 kg Sweet potatoes, peeled, chopped
  • 100 grams butter
  • 200 grams onion, finely chopped
  • 1 teaspoon grated orange rind
  • 100 ml orange juice
  • 200 ml chicken stock
  • 6 dried juniper berries
  • 1 teaspoon ground cinnamon
  • 350 grams pear, peeled, cored, chopped
  • 50 grams dried currants
  • 1 tablespoon honey
  • 2 tablespoons chopped fresh parsley
  • 2 tablespoons chopped roasted pecans
