ROAST DUCK AND PLUM SAUCE

3 hours 30 minutes

Preparation Method :

  • Combine marinade ingredients in a large basin. Add duck and baste with mixture.
  • Marinade 1 hour. Baste and turn duck every 15 minutes.
  • Drain duck, reserving marinade. Roast duck Chinese style on a rack over a pan of water at 175°C (340°F) for 2 hours, basting with marinade every 30 minutes.
  • Chop duck into serving pieces and arrange on a serving platter.
  • Heat oil in a saucepan, add plum sauce and heat through.
  • Pour over duck. 

INGREDIENTS

  • 3 kg duck
  • 2 tablespoons Cooking oil
  • 5 tablespoons plum sauce

Marinade

  • 5 tablespoons chicken stock
  • 2 tablespoons brown sugar
  • 4 tablespoons soy sauce
  • 3 tablespoons honey
  • 2 teaspoons five spice powder
