Preparation Method :

  • Blend all the ingredients together with plenty of salt and pepper. Spoon the mixture into a well-greased loaf tin and cover with greased foil.
  • Bake in a preheated moderate oven for 1½ hours.
  • Cool in the tin for 30 minutes, then turn out and allow to become quite cold.
  • Arrange some of the apricot halves over the top of the loaf.
  • Any left over can be added to a salad to serve with the loaf. Place the olives on the top edges of the loaf.
  • Garnish with lettuce.


  • 2 medium onions, peeled and finely chopped
  • 150 grams shelled walnuts, chopped
  • 1 kilogram raw turkey meat, minced
  • 200 grams whole meal breadcrumbs
  • 2 tablespoons Worcestershire sauce
  • 1 teaspoon chopped fresh mixed herbs
  • 2 tablespoons chopped parsley
  • 2 eggs
  • Salt
  • Freshly ground black pepper


  • 500 grams unsweetened apricot halves, drained stuffed olives, sliced
  • Lettuce leaves
