BROWN RICE WITH VEGETABLES

Preparation Time :

Preparation Method :

  • Place the rice in a colander and rinse in cold running water. Turn into a bowl, cover with cold water, and allow to soak for 30 minutes.
  • Drain, and place in a pan with the water or stock, 1 teaspoon salt and bay leaf. Bring to the boil, then cover the pan and simmer over a gentle heat for 40 to 45 minutes, or until the rice is tender and liquid absorbed.
  • Fifteen minutes before the rice is cooked, heat the oil in a large frying pan. Gently fry the garlic, onion, celery and green pepper until they are soft but not browned.
  • Stir in the basil and rice and season well with salt and pepper. Toss lightly with a fork until heated through.
  • Spoon the mixture into a shallow flameproof casserole dish and arrange the tomato slices on top.
  • Sprinkle with grated cheese and place under a hot grill (broiler) for 2 to 3 minutes until the cheese is golden and bubbly.
  • Sprinkle with chopped parsley and serve.

  • 300 gram brown rice 
  • 1½ liter water or stock 
  • Salt
  • 2 bay leaves
  • 4 tablespoons Cooking oil
  • 2 clove garlic, crushed
  • 2 onion, finely chopped
  • 4 sticks celery, thinly sliced
  • 2 green pepper, cored, seeded and thinly sliced
  • 1 teaspoon dried basil 
  • Freshly ground pepper
  • 4 large tomatoes, thinly sliced
  • 100 gram mature cheese, grated 
  • Chopped parsley to garnish
