Preparation Method :

  • Heat a wok over high heat until hot. Add oil. Pour in the eggs and cook, stirring constantly, until set, about 2 minutes. Transfer to a cutting board and cut into long strips.
  • Heat the remaining oil in a wok over high heat. Add the onion, garlic, and bacon. Stir-fry until tender, 3 minutes. Add the wine and sugar. Stir-fry for 1 minute.
  • Add the chicken and peas. Stir-fry for 1 minute.
  • Add the rice, soy sauce, oyster sauce, scallions, and half the eggs to the wok. Stir-fry until the rice is hot, 3 minutes. Spoon into serving bowls. Sprinkle with the remaining egg and serve hot.


  • 5 tablespoons peanut oil
  • 4 large eggs, lightly beaten
  • 2 onions, finely chopped
  • 4 cloves garlic, finely chopped
  • 150 grams bacon slices, chopped
  • 5 tablespoons wine or dry sherry
  • 3 teaspoons sugar
  • 500 grams cooked shredded chicken
  • 100 grams frozen green peas
  • 500 grams cooked basmati or jasmine rice
  • 5 tablespoons soy sauce
  • 2 tablespoon Chinese oyster sauce
  • 6 scallions (spring onions), thinly sliced diagonally
