Preparation Method :

  • Gently fry the crushed garlic, finely sliced onions and crushed fresh turmeric in a frying pan with the oil for a few minutes or until soft but not browned.
  • Add the rice and stir well to coat the grain in oil, the garlic, onion and turmeric.
  • Pour in the water and coconut milk, add the bruised lemon grass, pandan leaves and add salt to taste.
  • Bring to the boil, stir well. Cover the pan and cook gently for about 20 minutes or until all of the liquid has been absorbed.
  • Remove the pan from the heat. Cover and leave the pan to stand for 15 - 20 minutes. Discard the lemon grass and pandan leaves.
  • Transfer the rice to a warmed serving platter and garnish with chillies, cucumber, tomato, prawns etc.


  • 750 ml water
  • 450 ml coconut milk
  • 475 grams Thai fragrant rice or other long grain rice, washed and drained
  • 5 tablespoon Cooking oil
  • 3 garlic cloves, crushed
  • 3 onions, finely sliced
  • 5 cm piece fresh turmeric, crushed
  • 2 lemon grass stalks, bruised
  • 2 screwpine leaves  
  • Salt, to taste
  • Omelette strips, 2 fresh red chillies, shredded, Cucumber chunks and Tomato wedges
  • Deep-fried Onions, Prawn crackers, Coconut and Peanut Relish
