Preparation Method :

  • Slice the pineapple flesh and chop it into small even-size cubes.
  • Heat the oil in a large pan. When hot add the onion and chillies and fry for about 3 minutes or until softened. Add the strips of pork and cook until they have browned on all sides.
  • Stir in the prawns and rice and toss well together. Continue to stir-fry until the rice is heated thoroughly.
  • Add 100 grams of the chopped pineapple, cashew nuts and spring onions. Adjust seasoning to taste with fish sauce and soy sauce.
  • Spoon the rice into the pineapple skin shells. Garnish with sliced red chillies, and with shredded mint leaves.


  • 220 grams, lean pork, cut into strips
  • 150 grams cooked, peeled prawns
  • 1 kg plain boiled rice, cooked and allowed to cool completely.
  • 2 tablespoon Cooking oil
  • 1 small onion, finely chopped
  • 2 fresh green chillies, seeded and chopped
  • 1 pineapple, cut into quarters. Remove the flesh and reserve the skin shells for serving.
  • 45 grams roasted cashew nuts
  • 3 scallions, chopped
  • 2 tablespoon fish sauce
  • 1 tablespoon soy sauce
  • 2 fresh red chillies, sliced, to garnish
  • 10 fresh mint leaves, to garnish
