EGG AND GREEN VEGETABLE RISOTTO

Preparation Method :

  • Melt the butter in a heavy-based saucepan. Add the onion and garlic and cook gently until softened, stirring occasionally. Add the rice and stir until thoroughly coated in butter, then pour the stock.
  • Over a gentle heat, slowly bring the mixture to the boil, then simmer, stirring only once, until the liquid is absorbed. Add another the stock and cook until all this liquid has been absorbed.
  • Beat together the eggs, cheese, lemon juice, green vegetable and seasoning. Stir into the rice and cook very gently for about 5 minutes, adding more stock if the mixture seems too stiff. 

INGREDIENTS

  • 100 grams butter
  • 2 onion, chopped
  • 4 garlic cloves, crushed
  • 300 grams Arborio or risotto rice
  • 750 ml chicken or vegetable stock
  • 5 eggs
  • 100 grams freshly grated Parmesan cheese
  • 2 tablespoon lemon juice
  • 200 grams spinach, green cabbage, shredded
  • Salt and ground black pepper
