BROAD BEAN SALAD

Preparation Time :
30 minutes

Cooking Time :
10 minutes

Preparation Method :

  • Cook the beans in boiling salted water for 10 minutes, then drain and place in a bowl.
  • Mix with the lemon juice and oil and leave to cool.
  • Mix together the yogurt, mayonnaise and most of the herbs. Pour over the beans and mix well.
  • Transfer to a salad bowl and sprinkle with the remaining herbs before serving.

INGREDIENTS

  • 1 kg shelled broad beans 
  • Salt
  • Juice of 1 lemon 
  • 2 teaspoon Cooking oil
  • 6 tablespoons plain low-fat yogurt 
  • 8 tablespoons reduced-calorie mayonnaise
  • 2 tablespoon chopped mixed herbs
