Preparation Method :

  • Heat half the oil in a pan and gently fry the garlic and onion until soft, stirring often. Do not let them brown.
  • Add the tomatoes, parsley and sugar to the pan and continue cooking and stirring until the tomatoes are soft, about 5 minutes.
  • Mix the beans with the tomato mixture, turn into a serving bowl, cool and chill. Just before serving, whisk together the remaining oil and vinegar with salt and pepper to taste and add to the beans.
  • Sprinkle with the chopped spring onions (scallions) and serve.


  • 250 ml Cooking oil
  • 2 clove garlic, crushed
  • 2 onion, finely chopped
  • 4 ripe tomatoes, skinned and chopped
  • 30 gram parsley, chopped
  • 1 teaspoon sugar
  • 700 gram butter beans, cooked
  • 2 tablespoon wine vinegar
  • Salt and freshly ground pepper
  • 6 springs onions, finely chopped (including green tops)
