Preparation Method :

  • Separate the chicory leaves. Put the curd cheese, cucumber and onions in a blender.
  • Sprinkle the gelatine over the water in a teacup, stand the cup in a bowl of hot water and stir until dissolved.
  • Add the dissolved gelatine to the mixture in the blender and liquidize until smooth. Pour into a deep 7 inch cake tin with a spring clip.
  • Put the chicory leaves round the inside edge of the tin in an upright position so that they form a circle enclosing the curd cheese mixture.
  • Place in the refrigerator or a cool place and leave to set for about 3 hours. Carefully release the spring clip and lift off the tin.


  • 4 heads chicory 
  • 500 grams curd cheese 
  • 2 cucumber, peeled and sliced 
  • 2 bunch spring onions, trimmed and finely- chopped 
  • 30 grams powdered gelatin
  • 150 ml water
