WARM BLUE POTATO SALAD

40 minutes

Preparation Method :

  • Put potatoes in a large pot and add cold water. Then add salt. Bring to a boil, then reduce heat to medium-low and cover.
  • Simmer until tender, about 15 minutes. Drain and let cool to the touch. Peel and carefully cut into slices.
  • Combine potato slices, oil, and vinegar in a shallow bowl and turn gently to coat. Add celery, red onion, parsley, salt, and pepper.
  • Gently stir until well mixed. Cover and let stand for 20 minutes at room temperature before serving.  

INGREDIENTS

  • 2 kg small blue potatoes
  • 5 Tablespoon sesame oil
  • 4 teaspoon red wine vinegar
  • 50 grams finely chopped celery
  • 50 grams finely chopped red onion
  • 50 grams fresh flat-leaf parsley, finely chopped
