WARM POTATO SALAD WITH THYME

Cooking Time :
10 minutes

Preparation Method :

  • Cook the new potatoes in boiling salted water until just tender - about 8 to 10 minutes.
  • Meanwhile, put the lemon rind and juice, brown sugar, spring onions, olive oil, thyme and garlic into a shallow pan, and heat through until the mixture is just bubbling. Season to taste.
  • Drain the cooked new potatoes thoroughly and toss immediately in the prepared dressing.
  • Leave to stand for 4 to 5 minutes to give the potatoes the chance to absorb the flavor of the dressing, and then serve while still warm.

INGREDIENTS

  • 1½ kg new potatoes, washed and scrubbed
  • Salt
  • Freshly ground black pepper 
  • Grated rind and juice of 2 lemon
  • 1 teaspoon light brown sugar 
  • 6 spring onions, trimmed and minced
  • 6 tablespoons Cooking oil
  • 2 tablespoon chopped thyme
  • 2 clove garlic, peeled and crushed
