WILD RICE AND CITRUS SALAD

Preparation Method :

  • Cook the rice according to the packet instructions. Drain and rinse under cold water.
  • Combine the remaining ingredients and toss with the rice. Set it aside for about 10 minutes and serve.

INGREDIENTS

  • 225 grams mixture of wild and long-grain rice
  • 1 yellow pepper, de-seeded and chopped
  • 3 spring onions, sliced finely
  • 50 grams pine nuts, toasted
  • 1 orange, segmented and pith removed
  • 45 grams chopped fresh chives
  • 50 ml fresh orange juice
  • 2 teaspoon Cooking oil
  • Salt and freshly ground black pepper, to taste
