Preparation Method :

  • Place the cucumber in a glass bowl with the sugar and vinegar.
  • Turn the cucumber until coated, then leave, covered, for 10 minutes.
  • Rinse the cucumber slices under cold water, then drain. Place in a salad bowl with the spring onions (scallions).
  • Mix together the salt, pepper to taste, yogurt and cumin, and then pour over the cucumber.
  • Mix gently then chill for 2 hours (or more) before serving.


  • 1 cucumber, finely sliced
  • 2 teaspoon sugar
  • 2 teaspoon wine or cider vinegar
  • 4 spring onions, chopped
  • 1 teaspoon salt
  • Freshly ground pepper
  • 300 ml plain yogurt
  • ½ teaspoon cumin seeds, ground
