Preparation Method :

  • Place the garlic and egg yolks in a food processor and process until smooth.
  • With the motor running, pour in the oil, a little at a time, until the mixture begins to thicken.
  • Pour in the remaining oil in a thin stream until a thick mayonnaise forms.
  • Add the lemon and lime juices, mustard and tarragon.
  • Adjust seasoning with salt and pepper to taste and then serve.


  • 150 ml extra-virgin olive oil
  • 1 tablespoon lemon juice
  • 1 tablespoon lime juice
  • 3 large garlic cloves, finely chopped
  • 2 egg yolks
  • 1 tablespoon Dijon mustard
  • 1 tablespoon chopped fresh tarragon
  • Salt and pepper, to taste
  • 1 fresh tarragon sprig, to garnish
