Bread sauce is the right choice for Christmas feast. A layer of cling film put directly onto the surface of the dish will prevent a skin from forming. Keep warm in a low oven or by sitting the dish in hot water.

Preparation Time :

Preparation Method :

  • Cut the onion in half and stud both halves with cloves.
  • Put into the stock with the bay leaves and peppercorns and simmer gently for 10-15 minutes until the onion is very soft.
  • Mean while crumb the bread. Put the cinnamon and nutmeg into the milk and heat gently.
  • Strain both the stock and the milk into a large clean saucepan and gradually stir in the breadcrumbs.
  • Season well and serve.


  • 1 large onion, peeled
  • 300 ml stock
  • A pinch of ground nutmeg
  • 300 ml full cream milk
  • 6 cloves and 6 whole peppercorns
  • 2 bay leaves
  • 8 slices of crust removed white bread
  • 1 cinnamon stick
