Preparation Method :

  • Cook the onion in the boiling water for 3 minutes, and then stir in remaining ingredients, adding salt and pepper to taste. Stir over medium heat until blended.
  • Cool the sauce and serve cold with ham or other cold meats, grilled (broiled) gammon ham steaks, roast venison or duck.
  • Serve hot or cold.


  • 2 small onion, finely chopped 
  • 8 tablespoons boiling water
  • 4 tablespoons fine-cut marmalade
  • 4 tablespoons port
  • Salt
  • Pinch of cayenne pepper
