EGGS WITH CUCUMBER SAUCE

Preparation Method :

  • Peel the cucumber and chop it roughly. Melt the butter in a saucepan and cook the cucumber, covered, for 5 minutes.
  • Sprinkle in the flour and cook for 1 minute, then add the stock. Simmer for 10 minutes, then add the dill, salt and pepper to taste, and stir in the cream.
  • Place egg halves on each plate and spoon the cucumber sauce over.
  • Serve with chunks of crusty bread.

INGREDIENTS

  • 2 cucumber
  • 150 gram butter
  • 3 tablespoons plain flour
  • 300 ml hot chicken stock
  • 1 tablespoon chopped dill weed
  • Salt and freshly ground pepper
  • 8 tablespoons double cream
  • 4 hard-boiled eggs, halved
