Preparation Method :

  • Heat the oil in a pan and cook the tomatoes and garlic for about 4 minutes until the tomatoes are soft.
  • Add the tomato puree (paste), herbs and stock and bring to the boil and simmer for 5 minutes.
  • Add salt and pepper to taste, then rub the sauce through a sieve or puree in a blender.
  • If the sauce is too thin, reduce by rapid boiling.
  • Serve hot or cold.


  • 4 teaspoons olive oil 
  • 8 ripe tomatoes, skinned, seeded and roughly chopped
  • 2 clove garlic, crushed
  • 4 teaspoons tomato puree
  • 2 tablespoons chopped fresh or 
  • 1 teaspoon dried herbs (parsley, basil or oregano) 
  • 300 ml chicken stock 
  • Salt and freshly ground pepper
