Preparation Method :

  • Drain oysters and reserve liquid. Mince the oysters or chop finely and place in a saucepan.
  • Add water and reserved oyster liquid and bring to the boil.
  • Reduce heat, cover and simmer about 10 minutes.
  • Remove from heat, add salt and cool completely. Force the mixture through a fine sieve into saucepan. Measure the liquid, adding soy sauce.
  • Add dark soy sauce and bring o boil. Reduce heat and simmer gently about 7 minutes.
  • Cool to room temperature and pour into a sterilized jar. Seal and store in the refrigerator.
  • This sauce can be kept for several weeks.


  • 500 grams bottled oysters
  • 2 tablespoon water
  • 2 teaspoon salt
  • Soy sauce
  • 1 tablespoon dark soy sauce
