PLUM SAUCE

Preparation Method :

  • Place plums and apricots in a wok. Add chili sauce, salt and water.
  • Bring to the boil and simmer gently 15 minutes. Add a little more water if the mixture becomes too dry.
  • Stir in sugar and vinegar and simmer 20-30 minutes until the sauce reaches a chutney-like consistency.
  • Pour sauce into a sterilized jar, cover and refrigerate when cool.
  • This sauce will keep several months.

INGREDIENTS

  • 15 fresh plums, pitted and finely chopped
  • 50 grams dried apricots, soaked in warm water and finely chopped 
  • 2 teaspoon chili sauce
  • 2 teaspoon salt
  • 4 tablespoon water
  • 200 grams sugar
  • 200 grams vinegar
