SICHUAN SAUCE

Makes :
200 grams

Preparation Time :
10 minutes

Cooking Time :
15 minutes

Preparation Method :

  • Boil dried red chillies in one cup of water for five minutes. Drain, cool and grind to a fine paste.
  • Heat oil in a pan and add garlic cloves, peeled and finely chopped, green chillies, spring onions and ginger.
  • Saute for a minute, then add the red chilli paste and saute a bit more. Add a celery stalk, tomato ketchup and salt to taste. Stir well to mix.
  • Stir in white vinegar and simmer for a minute.
  • Take the pan off the heat when the oil rises to the surface. Cool and store.

 

INGREDIENTS

  • 15 dried red chillies
  • 100 ml Cooking oil
  • 20 garlic cloves
  • 3 finely chopped green chillies
  • 3 finely chopped spring onions
  • 1-inch peeled and grated ginger
  • 4 inch celery stalk
  • 4 tablespoons tomato ketchup
  • Salt to taste
  • 3 teaspoons white vinegar
