Preparation Method :

  • Melt the butter or margarine in a saucepan and fry the garlic and onion until well browned, about 8-10 minutes.
  • Add the chopped tomatoes, sugar and chili sauce. Bring to the boil, then reduce the heat and simmer gently for 20-2 5 minutes, until thick and pulpy.
  • Chop the gherkins and capers finely.
  • Add the chopped gherkins and capers to the sauce, stirring well to mix. Cook the sauce for a further 2 minutes.
  • Taste the sauce and season with a little salt and pepper. Use as a baste for vegetarian kebabs and burgers, or as an accompaniment to other barbecued food.

  • 1 teaspoon hot chili sauce
  • 25 gram gherkins
