Preparation Method :

  • Mark a small cross in the top of each tomato.
  • Place tomatoes in boiling water for 2 minutes; plunge in cold water.
  • Peel and discard the Skin then Chop tomatoes.
  • Heat oil in a heavy-based pan. Add garlic and onion and cook, stir for 5 minutes over low heat.
  • Add tomatoes, stir and cook for further 3 minutes. Allow to cool slightly.
  • While waiting for sauce to cool, add pasta to large pan of boiling water and cook until just tender.
  • Drain; return to pan.
  • To cooled sauce, add olives, sugar, vinegar, salt and pepper; stir until combined.
  • Add sauce to pasta and toss to combine. Serve.


  • 1 kg large ripe tomatoes
  • 1 tablespoon olive oil
  • 2 cloves garlic, crushed
  • 1 medium onion, finely chopped
  • 500 grams pasta of your choice(penne, spaghetti, fettuccine )
  • 50 grams pitted black olives
  • 2 teaspoons soft brown sugar
  • 1 teaspoon red wine vinegar
  • Salt and pepper(to taste)
